Novato Restaurateurs to Open Pub on Lakeville Highway

Jory Bergman and Mark Edwards are taking over the former Localo's Latin Grill in Petaluma and opening by the end of the month.

The venue that formerly — and briefly — housed Zocalo's Latin Grill on Lakeville Highway in Petaluma is getting a transformation by a Novato couple.

Gone are the burritos and $2 Tecates. Instead visitors to Pub Republic, scheduled to open by the end of October, will be treated to a foodie-friendly menu that includes Cajun fried calamari, steak, truffle burgers, Brussels sprout tacos, salads and four types of soups.

Besides being foodie-friendly, the new owners, Novato residents Jory Bergman and Mark Edwards are aiming to make the pub family-friendly,  too, where Mom and Dad can choose from a wide selection of beers on tap and every kids meal is served with fresh carrots and apple slices.

The feeling they are going for is cozy and fun, a place where people come together to watch a game, celebrate a birthday or just have an evening out.

“We really want to create a community pub,” Bergman said. “We will have TVs that show sports games, election coverage, whatever people feel is important.”

Before throwing herself into opening a new restaurant, Bergman worked in human resources for San Rafael software company Autodesk while Edwards is a former partner at Finnegan’s Marin, a Novato pub and restaurant, and also Ghiringhelli Pizzeria Grill. Previously he worked in the California Café chain and the PlumpJack Group of restaurants. 

Ingredients for Pub Republic's menu will come from local suppliers and be organic as much as possible. They include produce from Green String Farm, bread from Bordenave’s Bakery in San Rafael, Golden Gate Meats and Costarella Seafood, whose owner Bob Costarella lives in Petaluma.
